I'm also located in Minnesota. I filed late Jan 2020, Bio in March and got EAD late July, this pieces are handled by NBC. The I-485 at some point was transferred to the field office, they handle the interview scheduling, interview, adjudication etc. Unfortunately for you and I , MN is known to be extremely slow. That's all I know from their cases, I don't know what to tell more, sorry about that. My main point here is that you should not worry about it too much, your case transferring to a different FO is totally normal, sometimes it's even better because they usually transfer cases to less busy FO to get the whole process move faster.
